“To maintain this particular varietal’s energy, and craft a clean, pure Sauvignon Blanc, we night-picked this fruit and pressed it whole-cluster while the fruit was still cold. After one night settling in a stainless steel fermentation tank we barreled the wine down into 100% neutral French oak barrels where the wine aged for 6 months before we chose to bottle it. The result is a perfect warm weather wine.
The color of this wine is a light, yellow-gold in the glass. Lithe notes of lemon zest, lychee and lemongrass swirl around in an aromatic breeze as you experience the nose. On the palate there are notes of lavender honey, white flowers, brioche and white peach. The natural acidity is an edgy, architectural frame that keeps you on your toes from front to back while the sleek, polished trajectory of this wine finishes with a bright, even keel”.
